Raymond’s Gourmet BBQ – Chicken Satay Recipe

My parents went on a gourmet BBQ course last year and were given this recipe for chicken satay. I have to say it was delicious, so I ask mum for the recipe. Here it is:

Ingredients

Here are the ingredients for the chicken satay base:

  • Chicken
  • 2 tsp turmeric
  • 2 tsp coriander
  • 2 tsp cumin
  • 2 tbspn sweet soy sauce
  • 2 cloves of crushed garlic
  • Grated lemon rind of half a lemon
  • 1.5 tsp salt
  • 1 tbspn sugar

Here are the ingredients for the satay sauce:

  • 2 onions
  • 4 chopped cloves of garlic
  • 0.5 tsp of dried lemongrass powder
  • 1.5 tsp of shrimp paste (I think you can either substitute fish oil or leave this out all together)
  • 1.5 tsp of chilli paste
  • 3 tbspns of penut or soya oil
  • 2 cups of penut butter
  • water
  • 1/3 cups of sweet soy sauce
  • 1/3 cups of coconut cream
  • salt and pepper

Recipe Directions

Combine the ingredients for the satay chicken in a bowl and marinate for an hour or more. Cook on bamboo skewers. For the sauce, mix the onion, garlic, lemongrass, shrimp paste, chillies into a paste. Fry for 3 minutes in hot oil then add peanut butter and soy sauce. Gradually add water until it makes a thick sauce. Finish with coconut cream and seasoning.

Serve the chicken satay with rice to eat as a meal, or on skewers as a BBQ treat.
